Freeze-dried pineapple is healthy because there are no additives or preservatives and it is packed with vitamins and antioxidants. Plus, pineapple contains Bromelain, an enzyme that helps you digest protein. It really is the perfect sweet snack.
If you have a Harvest Right Freeze Dryer, be sure to pick up a couple of pineapples when you see them on sale at the grocery store. A medium freeze dryer can freeze dry two whole pineapples at once.
To freeze dry pineapple, cut it into equal size pieces so that they freeze dry evenly — ¾-inch pieces or smaller will work best. If you plan on doing a large batch of freeze-dried pineapple, get a Pineapple Corer/Peeler. It makes the job go a lot faster!
Pineapple takes a long time to freeze dry because it has a high sugar content and lots of water. The larger you cut your chunks, the longer they will take to freeze dry. It’s not uncommon for it to take 30+ hours. At the end of your drying cycle, check your pineapple to make sure there is no moisture in the very center. If there is, add more drying time.
After freeze drying, store pineapple in an airtight container with oxygen absorbers for optimal shelf life. Most people use 7.5 mil mylar bags. You can get them for a good price at DiscountMylarBags.com.
You can rehydrate pineapple, but I think it tastes great dry. To rehydrate freeze-dried pineapple, soak it in a small amount of water. This takes a long time — more than 30 minutes. Try not to use too much water because it can dilute the flavor.
